Curried Red Lentil Soup

High protein, low fat, warming & seriously delicious. This soup recipe couldn’t be any easier!

Prep time: 15 minutes
Cook time: 30 minutes
Serves: 6- 8 people


  • Olive oil
  • 1 brown onion, chopped
  • 2 cloves fresh garlic, crushed
  • 1 tablespoon mild curry powder
  • 1 1/2 cups dried red lentils
  • 1 fresh tomato, roughly chopped
  • 4 cups vegetable stock
  • 3 carrots, peeled & diced


  1. Heat oil in a large saucepan over low heat. Cook onion & garlic for 3 to 5 minutes or until onion is soft.
  2. Add the curry powder, lentils, tomato, stock and 1 cup boiling water. Bring to the boil.
  3. Reduce to simmer, & leave it uncovered, for 20 minutes or until soup has thickened & lentils are cooked.
  4. Serve soup immediately with bread or keep it in the fridge for up to 3 days.


  • This soup reheats really well for a work lunch or late night dinner.
